As I ponder how to celebrate Sandwich night in this month of December, I open the fridge for inspiration and to my delight see the prime rib left over from Christmas. This is the perfect inspiration for Sandwich Night – Prime Rib Sandwich come to mama! My taste buds start tingling.
These are what the beautiful prime ribs looked like for Christmas Dinner. Here at Sandwich America we are not sure whether we like Prime Rib better or the many sandwich creations we get with the leftovers. It’s good we don’t have to choose.

Christmas Dinner Leftovers for December Sandwich Night
With the delicious prime rib we made the most delicious of delicious Prime Rib Sandwiches. Take a look at this one.
We sliced the prime rib when it was still cold so we could get extra thin slices of this delight.
We brought it to room temperature then put in a pan only briefly to bring the chill off of it – we didn’t want to lose the delicious juicy rare pinkness. We used the same horseradish cream sauce we serve with prime rib. Grilled a potato roll. Then to really top this off we pickled some shallots and jalapenos then dredged them in flour and fried them for a quick minute to add some tart crispy perfect bites for this sandwich. Oh boy was this a revelation. So simple and something you must must must try!
Pickled Deep Fried Vegetables – an Amazing Sandwich Topping
Here is a reminder of how to pickle vegetables from a previous post. Now we at Sandwich America love us some pickled veggies but frying the pickled delights adds a whole new level. Simply dry off your veggies dredge in flour seasoned with kosher salt and fresh ground pepper, shake off the excess flour and fry in oil heated to 350 degrees until golden – literally less than a minute. You won’t be able to wait until they are on the sandwich – we almost ate all of them before we even made the sandwich.
Add some beer and some fresh fried potato chips and you have the most perfect leftover creation ever.
