One of our new obsessions here at Sandwich America is Kale!.  These Kale Chips are one of our favorite ways to utilize this great green.

Everybody knows that potato chips go great with a sandwich but so do these kale chips.  The finished product is light, airy, crunchy, and flavorful and the good news is you can eat an entire batch by yourself and not feel an ounce of guilt..

3 ounces of kale has only 45 calories and contains protein, fiber and a host of nutrients including potassium, vitamin A, vitamin C, vitamin B6, calcium, and iron.  Next time you are serving up a sandwich, prepare these Kale Chips ahead of time and enjoy!

There are a couple of important tips to making the perfect Kale Chip:

1)  Massage the kale before putting it in the oven.  Kale in its raw state has has a bitter bite to it.  By massaging a small amount of oil into the kale, the bitterness dissipates and you get a bright green sweeter kale.  If you’ve had kale and think you don’t like it, it’s probably because it wasn’t prepared properly.  This easy technique will make you a kale lover.

2)  Be sure that you use a low oven temperature.  The key to a good kale chip is to get it dried out before it burns.  If the oven is too hot, the edges of the kale will burn before the kale chip is dried out and you will have soggy middles and burnt edges.  It takes no extra active time – just a little more time in the oven – and the results are great!  So, keep the oven at a low temp and give yourself a little extra time for the perfect kale chips.

PERFECT KALE CHIPS

Ingredients:

  • 1 small bunch Whole Leaf Kale
  • 1 Tablespoon Olive Oil
  • Kosher Salt or other Seasonings to Taste

Directions:

Preheat the oven to 300 degrees.  Pull the  leaves off the center stems of the kale and discard the stems.  Tear the kale leaves into pieces the size of a typical potato chip.  Coat the kale with 1 tablespoon olive oil.   Massage the oil into the kale until it becomes bright green and softens with a slight translucent appearance at the tips – about two minutes.

Spread the Kale in a single layer on a sheet pan.  Sprinkle with salt and other seasonings as desired.  Get creative here – cumin, cayenne, red pepper flakes – whatever flavors you like – the sky is the limit.

Bake for 15 minutes.  Turn pan and bake for an additional 10 minutes watching carefully the last ten minutes that they don’t over cook.

Kale chips are best the same day they are made and we never have any leftovers.  If you need to store them for a couple days, do so in a container that won’t crush them as they are very delicate, and won’t allow any access to moisture.

These are great with a sandwich but also great  anytime you are craving a crunchy snack.   So pile a bowl full and make it your new movie night snack or crunchy craving fix.  You won’t believe how satisfying these delicious bites are.
